SIMPLE COCONUT MILK RICE





Thengai paal satham/ Coconut Milk Rice is a simple flavorful recipe. The taste of this rice is extraordinary and it's healthy too. You can serve it with any gravy or, spicy curry or, simply with raita and chips. And the specialty of this rice is it suits kids to other elders at the house. For sure everyone will love the mild at the same time flavorful rice.

After marriage when I went to my sister-in-law's house they served this coconut milk rice with some mushroom gravy. That was the first time I have tasted this recipe and it was mind-blowing. I must have finished half of the entire quantity, I kept eating😋. That's the largest quantity of food I have ever eaten in my entire life till that day( Because after that every time I prepare this recipe the quantity keeps on increasing😉).

Then I learned the recipe and gave it a try, at the first attempt itself I was able to recreate the recipe almost. Probably this must be the first recipe I have learned properly. And is simply the best and always on my favorite list. At first, I only used fresh homemade coconut milk for this recipe and that's the only difficulty of this recipe. But later once I was introduced to packed coconut milk, I tried it as well.

Definitely, there is a lot of difference in the flavor between the homemade and the packed coconut milk. But the taste was still great. Actually, nowadays I am using the packed ones the most. Whenever I ask my kids what you guys want to have for lunch their only constant choice is this coconut milk rice. So at times when I was out of coconut milk, I even used the regular milk, and only with the small difference, the rice tastes good though.

So I guess, this will be a perfect recipe in these lockdown times. When the family wants to eat something special and the mommy wants to do something easy yet rich. This flavored rice will be the ultimate choice. After saying all that I guess it's time for the recipe. Let's start with the ingredients,


INGREDIENTS:

1. Basmati Rice                         -2cup.
2. Cinamanan Stick                 -1 inch piece.
3. Whole Pepper                       -a few.
4. Elaichi                                      -1 or 2.
5. Bay Leaf                                  -1 or 2.
6. Green Chili                              -1 or 2.
7. Ginger Garlic(Crushed)    -1tbsp.
8. Mint                                          -a few leaves.
9. Oil                                              -2tsp.
10. Butter                                    -1tsp(Optional).
11. Coconut Milk                       -1cup.
12. Salt                                         -as per taste.
13. Water                                     -2 cup.
14. Lemon                                    -1/2.

METHOD:

1. Prepare the required ingredients and keep them ready.
2. Rinse well and soak the basmati rice in warm water for 20mins.
3. Here I used a rice cooker to prepare this coconut milk rice or you can also use a regular pressure cooker and one whistle will be enough to cook basmati rice in the pressure cooker. Heat the cooker and add some oil along with some butter.
4. Once the butter melt add Bay leaf, chinaman stick, whole peppercorns, cardamom, and slit green chili. Roast all the ingredients till turn aromatic. 
5. Then add sliced onions with some salt and saute till they turn a golden color.
6. Next add crushed ginger garlic and finely chopped mint, and cook them until the raw smell goes off.
7. Now it's time to add our main ingredient, add the coconut milk with some required water for the rice to cook along with appropriate salt. Mix everything together nicely and let it boil.
8. Once it starts to boil add soaked rice to it and give a mix.
9. And finally before closing the cooker squeeze a piece of lemon then mix and let it cook completely.
10. After the rice is cooked completely let the pressure naturally. And then open it and give it a good mix. If you want you can add some ghee at this stage and mix it without breaking the rice.
11. Our tasty and aromatic thengai paal satham is ready and it's tasting time. Serve it with some spicy gravy or curry and enjoy.

 NOTE:

1. According to the quality of the basmati rice you are using and up to your preference how you prefer to cook the rice you might need to adjust the liquid proportion to the rice. In general, for basmati rice 1: 11/2 is the standard rice to water quantity. For me, since I am serving to the kids I want the rice to be cooked softly so I used to add 1/2cup of extra water after the overall amount of water I used.
2. As I mentioned above if you are out of coconut milk you can simply replace it with regular unboiled milk instead of coconut milk. No one ever finds out the difference in my home😉.
3. When you are roasting the whole spices at the beginning you can add fennel seeds and a small piece of kalpasi for extra flavor.
4. To prepare this recipe you can use any available rice variety. Basmati is not necessary.
