 MURUNGAKKAI SAMBAR / DRUMSTICKS SAMBAR



Drumstick comes with a nutrient punch such as vitamins K, C, A, B, and minerals like Iron, Calcium, and Magnesium, and a good source of Fiber and Protein, which are all beneficial to promote overall health. Especially it is very good for pregnant or lactating mothers and  It's always great to know that, what your family likes to eat is actually good as well, isn't it so.

I am not passionate about eating drumsticks but definitely, I love its flavor and everyone in my family loves to eat drumsticks. So today I am gonna share my Sambar recipe, Which is again one of my famous recipes among my friends. The secret of my sambar is simple, I believe in the Way of cooking more than the ingredients. Just because you used all the wonderful ingredients you can't guarantee the taste of the food instead, with the limited ingredients if you cook with some love it will taste delicious, right. 

So for better results try to follow the instructions whatever I have given here, I am sure you will get the exact taste as mine. Simply if you are passionate about cooking then the taste of your food will be too good. It's time for the sambar recipe, here comes the ingredients,

INGREDIENTS:

Preparation Time: 10mins.
Cooking Time: 30mins.
Serves : 3.

1. Murungakkai/ Drumsticks        -1cup.
2. Brinjal(Optional)                          -1/2cup.
3. Tomato                                              -1no.
4. Tamarind                                         -1lemon size.
5.Toor dhal(Cooked)                         -2cups.
6. Sambar Powder                             -2tsp.
7. Hing                                                    -1/2spoon.
8. Turmeric Powder                           -1/4spoon.
9. Oil                                                        -2spoon.
10. Mustard Seeds                              -1/2spoon.
11. Methi Seeds                                    -a few.

METHOD:

1. First soak the tamarind in a cup of warm water. Feel free to adjust the quantity of tamarind as per your taste preference.
2. Now pressure cook the toor dhal for 3 - 4 whistles and wait until the pressure is released naturally. Then mix it well until you get a smooth texture.
3. Meanwhile, clean and cut the vegetables and keep them ready.
4. Now to a wide pan or Kadai add oil, once it's hot add mustard and methi seeds.
5. Now add cut drumsticks and let them cook for a minute.
6. Then add cut brinjal and cook it for a minute.
7. Add cubed tomatoes and cook until it becomes soft.
8. Once tomatoes got cooked add sambar powder, turmeric powder, hing, and combine everything well.
9. Then add tamarind extract along with enough salt for the recipe. Let it cook all together for 10-15mins in slow to medium flame.
10. After that, it's time to add the cooked toor dhal to the sambar.
11. Let it cook for another 5mins to combine everything well. Now you can taste the sambar for salt and if you need to.
12. That's it our tasty and flavorful Murungakkai Sambar is ready to be served. Garnish sambar with some fresh coriander leaves for some extra flavor.

METHOD WITH PICTURES:


1. In a wide pan or Kadai add oil, once it's hot add mustard and methi seeds.

3. Then add cut brinjal and cook it for a minute.

5.  Once tomatoes got cooked add sambar powder, turmeric powder, hing, and combine everything well.



6. Then add tamarind extract along with enough salt for the recipe. Let it cook all together for 10-15mins in slow to medium flame.


7. After that, it's time to add the cooked toor dhal to the sambar. Let it cook for another 5mins to combine everything well. Now you can taste the sambar for salt and if you need to.



8. That's it our tasty and flavorful Murungakkai Sambar is ready to be served. Garnish sambar with some fresh coriander leaves for some extra flavor.


NOTE:

1. I preferred to make this recipe without onion so I didn't use onion today. If you want to use onion you can add shallots before adding drumsticks.
2. My sambar will be a bit tangy and it will be thick in texture, we love that way. If you and your family prefer differently then adjust the consistency as you like.
3. The texture of the dhal I use for sambar should be completely cooked so I prefer not to see any whole dhal, so I used to mash it completely using a whisk.
