 HOMEMADE COOKIES WITH ALMOND FLOUR


Who can say no to crunchy tasty Cookies?? What can be a better option than having the perfect cookies with a cup of aromatic Tea? It sounds perfect right. Yes, I know. That's why I decided to share my simple tasty and healthy cookie recipe with you guys. This recipe and the wheat biscuits are my best recipes in baking so far. No matter how much I make it never enough for us. Because if we start eating it's very hard to control, the taste will be so tempting.

Especially my kids are big fans of my chocolate cookies. It will remind the Boost biscuits which we enjoyed a lot in our childhood. In general, I and my husband don't prefer to include too much sugar in our diet. On the other hand, we often get carving to eat something sweet and crunchy. In particular, for my husband to control the carving to eat some sweets after lunch is very difficult. He used to roam around the kitchen like a cat searching for its favorite treat😂.

And another time to control our carving is during our weekend late-night TV time. We will literally wait for our kids to fall asleep so that we can start enjoying our snack time (Sorry kids😉😍). And such those times these cookies are always one of the few snack items which give us the satisfaction for our carving. These cookies won't be too sugary or buttery, even I used to replace sugar with jaggery at times. Jaggery will give a beautiful flavor to the wheat biscuits. 

So without worry about diet, we can enjoy as much as we want. Of course, these are not healthy items to eat at night but much better than the store-bought ones. Which are made full of sugar. And just for a change, I have given two different varieties of cookies here. The ingredients of both the recipes are more or less the same but the taste will be definitely unique. So without any further delay let us check out the recipe below,

CHOCOLATE COOKIES:

INGREDIENTS: 

1. Maida (APF)                        -1cup.
2. Almond Flour(Coarse)    -1/2cup.
3. Sugar(Powdered)             -3/4cup.
4. Butter                                    -50gms.
5. Oil                                            -50ml.
6. Cocoa Powder                     -1/4cup.
7. Baking Powder                   -1tsp.
8. Milk                                         -1/4cup(Chilled).
9. Vanilla Extract                    -1tsp.
10. Salt                                        -a pinch.

METHOD:

1. In a wide bowl add room temperature butter, oil, vanilla extract and, sugar powder. And mix them all together thoroughly with a whisk.
2. Then add all the dry ingredients one by one like All-Purpose Flour(APF), almond flour, Baking powder, Cocoa Powder and, a pinch of salt. Add mix everything together using your hands so that you can feel the texture and if needed you can make adjustments accordingly.
3. Now the texture of the cookie mix will be dry that it cannot be shaped or even be combined as a dough. So now, by sprinkling a small amount of milk combine the dough.
4. Remember, the cookie dough need not be smooth in texture. It should be crumbly so add more milk only if necessary. Because, if the dough is watery the cookies will be hard and you may not get the nice texture of a cookie.
5. Once you combined dough is in crumbly texture you can preheat your oven at 350 to 375*f (180-190*C). And grease your baking sheet completely with some oil or butter and keep them ready.
6. Now take the dough and spread it evenly to half an inch thick sheet using your chapati roller. And cut out cookies using the cookie cutter or any available shapes at home(Any small sharp-edged object like a box lid would work just fine).
7. Arrange them on the baking sheet and place them in the oven and bake it for 12-15mins according to the size and count of the cookies. Here I used oven-safe foil since I am making more than one batch of cookies. This will save me some time in preparing the next batch and it's mess-free as well😉.
8. After the given time you might see the difference in the color of your cookies that shows it got cooked completely. While the cookies are hot they will be soft in texture. So give them some cooling time to know feel its crunchiness.
9. Just repeat the same until you baked all the dough you just prepared.
10. And enjoy the tasty crunchy and healthy homemade Chocolate cookies with your favorite cup of drink with your family.

KIDS SPECIAL COOKIES:

Just to make it appetizing for kids I have added a few different ingredients to this recipe. If any of you love coconut flavor like me, then this recipe is just for you guys. Cheers!!✋.

NOTE:

1. If you added extra liquid by mistake, then add more flour to make it crumbly in texture. To get perfect cookies don't alter the proportions of the ingredients too much.
2. If you want to store the cookie dough for later put them in an airtight container keep it in the fridge. This will stay good up to 4days.
3. If you like coconut flavor and want to get coconut in your mouth. Then feel free to add 2tbsp of shredded coconut while preparing the dough.
4. Here to match the flavor with the color I used a spoon of Strawberry essence instead of vanilla. Such that you can also try different flavors every time you bake them.
5. The almond flour that we used here will enhance the flavor and it will make it soft and crunchy. If you wish you can increase 1/4 cup of almond flour by decreasing the same quantity of maida(APF).

FUN FACT:

Chocolate chip cookies are actually a sweet mistake. Yes, the baker added the chocolate chunks to the cookie dough by thinking it will melt during the baking. As you know they turned crunchy and everyone like it that way. So it seems not every mistake will lead to failure after all😍.
