Diwali is always special. Even saying Diwali gives us immense pleasure. If you ask me I am definitely can't tell what is the exact reason it can be anything like shopping for a dress for the family, getting offers for almost everything, seeing loads of people on roads busy and happily purchasing things, the magic of all the colorful lights and fireworks, or most importantly the variety of homemade snacks available all day long.

I would stick with the last option obviously😉😋. Talking of snacks I would always love to have a variety of snacks as much as possible. That is my way of feeling the festival. My childhood memories may be the major reason for that. As a kid, we used to go to our grandparent's home for every festive. When getting back home my grandmother used to give us lots of snacks. And my parents used to share Diwali sweets and snacks with friends and colleagues. Those memories are always sweet and priceless.

Among all the variety of sweets and snacks, my kids love omapodi the most. It's so simple even beginners can easily prepare omapodi. Making omapodi is really easy there is no complicated process involved in this all you need to do is just to follow the measurements and instructions below,

INGREDIENTS:

1. Besan                        -1cup.
2. Rice Flour                -1/4cup.
3. Butter or Oil           -1spoon.
4. Salt                            -as per taste.
5. Hing                          -a pinch.
6. Ajwain                      -1/2spoon.
7. Water                        -1/2cup.
8. Oil                              -to fry.
9. Curry Leaves          -a few.     

METHOD:

1. Take a small bowl add 1/4cup of warm water then add the hand crushed ajwain seeds and let it sit covered for a few minutes.
2. In a mixing bowl add shifted besan, rice flour, salt, hing, and butter. Then mix all together to combine everything.
3. Meanwhile in a wide pan add some oil and switch it on, on a medium flame to fry.
4. Then filter and add soaked ajwain water to the mix and combine once again.
5.Now if needed add water little by little and mix it well until making a smooth dough and separate them into small balls.
6. Now fill the greased sev press and fill it with some dough keep it ready.
7. Once the oil is hot enough start pressing the dough out of sev press directly in the oil in a circular motion.
8. Wait till the bubbles get reduced, it means it got cooked then flip over and cook the other side.
9. Once it got cooked take out the omapodi and place them on a paper towel for a minute.
10. After finishing with all the dough and after switching off the flame add a few curry leaves and fry them a bit then add to the freshly made omapodi for a beautiful flavor.
11. When it cooled completely break them and store it in an airtight container. I hope it won't stay any longer 😉 . Enjoy with your family.

NOTE:

1. If the dough is too tight which is hard to press through the sev press then feel free to add a bit of water at a time and combine the dough thoroughly. It won't affect the taste or the texture of the omapodi no need to struggle with the tight dough for taste.
