 VEGETABLE WHITE KURMA / VELLAI KURMA


White Kurma is a quite favorite side dish for all, I guess. Even though we have a lot of kurma varieties. The reasons may be the color, mild sweetness, rich taste, or the aroma of this kurma. I am not sure about you all, but this is one of my most favorite recipes😉, it's so yummy😋, even talking about this recipe makes my mouth watering. And I am really good at preparing this recipe.

Believe me, this particular recipe is quite famed among our friends. I am gonna share a short story here. After falling in deep love with cooking and after getting some compliments about my cooking I decided to cook for my kids Birthdays. Because that is the perfect occasion to treat all my friends with all of my best recipes and get some immediate feedback from all of them at once. With my husband's full support and lots of help(Thank You, Daddy, 😍), we prepared quite a treat. But all among the dishes, this white kurma got a lot of wonderful reviews and many of them asked for the recipe too. Keeping that in mind I am gonna share my recipe with a few secret ingredients with you all here.

Now, to mention white kurma, it is one of the few recipes that go well with almost any main dish like, Chapati, Dosai, Idly, Pulao, Idiyappam, Appam, and the list should go on... And my favorite combination is Roast Dosai and White Kurma, it's just heaven for me, whenever I prepare this I will just forget counts, fitness, diet all those stuff. All I do is just enjoy the heavenly taste of it😋.

Enough of me and my love of this recipe I guess. So here is the recipe, Since I told you I have a few secret ingredients I am not gonna give those in the ingredients just to keep it suspense, So please do read the recipe completely. Here we go,

INGREDIENTS:

PREPARATION TIME: 10mins.
COOKING TIME: 20mins.
SERVES: 2.

1. Bay leaf                              -1no.
2. Cinamon Stick                 -1inch piece.
3. Kalpasi*                            - a few.
4. Cardamom                       -2nos.
5. Fennel Seeds                    -1/2spoon.
6. Green Chilli                      -3nos.
7. Onion                                 -1no.
8. Ginger garlic paste       -11/2spoon.
9. Carrot                                -1/2cup.
10. Beans                               -1/2cup.
11. Cauliflower                   -1/2cup.
12. Peas                                 -1/2cup.
13. Chilli Powder               - 1/2spoon.
14. Coriander Powder      -1/2spoon.
15. Garam masala              -1/4spoon.

TO GRIND:

16. Coconut                           -3/4 cup.
17. Almonds(Soaked)        -10-12nos.
18. Poppy Seeds                  - 1/2spoon.
And 2 Secret Ingredients😉.

METHOD:

1. In a wide saucepan add 2spoons of oil, Once the oil gets hot add the whole spices except fennel seeds and let it roast for a minute, it will help to infuse the flavor in the kurma.
2. After that add fennel seeds and slit green chili. Now itself it will give a beautiful aroma.
3. Then add sliced onion and a pinch of salt, let it cook until it turned golden in color.
4. Now add ginger garlic paste, cook for a minute.
5. Then add peas and cauliflower and saute for a couple of minutes.
6. After that add all the vegetables with some salt till it gets cooked.
7. Meanwhile, grind coconut, soaked almonds, and poppy seeds to a smooth paste. And keep it aside.
8. Now add all the powder spices chili powder, coriander powder, and garam masala cook for a minute.
8. Then add 1/2 cup of water to the vegetable and let it cook for 5minutes.
9. After the vegetables are cooked, add the ground paste to the pan and let it cook for 5minutes.
10. Now it is time for the secret ingredient, It is 2 spoons of thick curd and 1/4 cup of milk.
11. Beat the curd until gets a smooth texture before adding to the kurma to avoid unevenness in the kurma and add 1/4 cup milk.
12. After adding curd and milk don't cook it for a lot of time.
13. And finally, add chopped coriander and close the kurma with a lid. Keep it closed for at least 5mins.
14. That's all our vegetable white kurma is beautifully cooked to be served.

METHOD WITH PICTURES:

1. Prepare all the ingredients, and keep them aside.

11. And finally, add chopped coriander and close the kurma with a lid. Keep it closed for at least 5mins.


12. That's all our vegetable white kurma is beautifully cooked to be served.


NOTE:

1. Kalpasi is the key ingredient for this recipe, that is what makes this kurma unique so do not skip it for this recipe.
2. Before adding curd to the recipe beat it well to avoid any lumps.
3. To make this recipe more healthy and suitable for everyone at home I used almonds here, otherwise, cashews are the actual ingredient for this kurma, so feel free to replace them if that suits your family.
4. Even you can use roasted grams along with almonds by reducing the number of almonds.
