VEG SALNA


Salna is such a unique recipe that cannot be separated from Parota or Briyani. There are lots of people  out there who would love this excellent combination parota with salna, making this at home may not be an option for many. But preparing salna is so simple when you follow a proper recipe. It almost includes every known spice in it which make the salna so aromatic and flavorful that enhance the taste of briyani or porota to a different level, there are a few varieties of salna recipe are there like plain salna, vegetable salna, or non-veg salna.

I learned this particular recipe from a restaurant master from our home town which is popular for parota and salna in particular. I learned this recipe for my husband, to him parota & salna is an emotion more than food. There are thousands of memories associated with this combination in his childhood, in simple for him, if you ask him to define childhood in short, then the answer is Porato & Salna. And I want to dedicate this recipe to my husband and every other salna lover just like him.

Here, I am gonna give the recipe for empty and vegetable salna. The taste will be awesome, after trying this recipe you won't need to crave to eat at any hotel or restaurant. The preparation is so simple, the only thing is the recipe needs almost all the spices but at a specific quantity, quantity is all that matters in this recipe. So try to use the exact quantity as I have mentioned below and I will try to post briyani and parota recipes soon, let's get started.

INGREDIENTS:

TO GRIND:

1. Coriander seed                        -2tbsp.
2. Pepper                                        -1/2tbsp.
3. Jeera                                           -1/2tbsp.
4.Fennel seed                                -1/2tbsp.
5. Cinnamon stick                       -2inch stick.
6. Bay leaf                                      -2nos.
7. Star anise                                  -1no.
8.Cardamom                                 -3nos.
9. Cloves                                         -3nos.
10. Onion                                        -1no( cut into cubes).
11. Ginger                                      -3inch.
12. Garlic                                       - 5-7nos.
13. Tomato                                     -3nos(medium).
14. Green Chilis                             -3nos.
15. Turmeric Powder                 -1/2spoon.
16. Chili Powder                           -1/2spoon.
17. Salt                                              -as per taste.
18. Coconut                                     -1/2cup.
19. Soaked almonds                     -8-10nos.
20. Poppy seeds                              -1tbsp.

FOR SALNA:

1. Bay Leaf                                      -1no.
2. Cardamom                                  -2nos.
3. Fennel seed                                 -1/2spoon.
4. Onion and Tomato                  - 1/4cup each.
5. Fresh Coriander leaf               -a few.
6. Curry leaf                                    -a few.
7. Carrot(Optional)                       -1/4cup.
8. Beans(OPtional)                        -1/4cup.
9. Potato(Optional)                       -1/4cup.


METHOD:

1. In a pan heat 2spoon of oil in a medium flame, then add coriander seeds, jeera, fennel seeds, pepper fry for few seconds.
2. Then add cardamom, cloves, bay leaf, cinnamon stick, and star anise fry for few seconds.
3. Once all the spices turn aromatic add cubed onions and green chili to it and saute for a minute.
4. Next, add garlic and ginger and fry them until cooked.
5. Now, add tomato cubes and salt then cook them all together for 5mins in medium flame.
6. Once the tomato got cooked now add turmeric and chili powder, then give it a mix.
7. Now, add soaked almonds and poppy seeds and let it cool completely.
8. Once it comes to room temperature add them to a mixie jar along with the coconut and grind it to a smooth paste.
9. Now, in the same pan add a spoon of oil then add a bay leaf, cardamom, and fennel seeds.
10. Then add little onion saute for a minute, then add the vegetable like carrot, beans, and potato with a bit of salt and cook for few minutes.
11. Once the vegetables are cooked add tomato and cook for a minute.
12. It's time to add the ground paste, but before adding the paste taste for seasoning, if you need any extra spice it is the right time to add chili powder saute for a minute, and then add the paste.
13. Then adjust the consistency add water according to your preference.
14. Once it starts to boil add a few coriander and switch off the stove.
15. That's all our tasty salna is ready to be served.

METHOD WITH PICTURES:

5. Let it cool completely, then add to a mixie jar and ground to a paste along with coconut.


6. Now, in the same pan add a spoon of oil then add a bay leaf, cardamom, and a few fennel seeds.


7. Then add sliced onion saute for a minute.


8. If you want to add vegetables it's time to add carrot, beans, and potato along with salt.


9. Once the vegetables are cooked add tomato and cook for a minute.


10. It's time to add the ground paste, but before adding the paste taste for seasoning, if you need any extra spice it is the right time to add chili powder saute for a minute, and then add the paste. Then adjust the consistency add water according to your preference.


11. Once it starts to boil add a few coriander and switch off the stove. That's all our tasty salna is ready to be served.


NOTE:

1. Just be conscious while adding water to the salna. Because, if you add more water then salna will become tasteless. It's better to taste before adding more water.
2. If you guys like mint in salna then add chopped mint before adding the ground paste.
