MINT RICE / PUDINA SATHAM


Mint is a unique herb that can be used in almost everything from cooking to skincare and it has wonderful health benefits also. To mention a few, it contains Potassium, Magnesium, Calcium, Phosphorus, Iron, Vitamin C, Vitamin A. Which can be helpful in Aids Digestion, Treats Asthma, Treats common Cold, Cures Headache, Oral Cares, Aids in Weight Loss, Improves Brain Power, Skin Care, Help in ease symptoms of  Morning Sickness or Nausea, and it also helps to Beats stress and depression.

I guess it's really great, isn't it?. Even though it is full of goodness, I never liked its flavor before, actually, I just hate it. The major reason is it's so new to me, it was never on our family produce list. But once I got married the situation is entirely different they just love mint. So almost it is part of the day-to-day cooking, it was hard for me to eat it. Once my in-law prepared this mint rice, when I tasted it I just can't able to stop myself. This is how I started eating mint.

Now to talk about this recipe, it's very simple yet delicious. Everyone in your family will love it for sure, just like my family does. So without any more delay let us check out the recipe,

INGREDIENTS:

1. Mint                             -1bunch.
2. Coriander                  -1/2bunch.
3. Green Chili                -4nos.
4. Ginger                        -2inch.
5. Garlic                          -3-5nos.
6. Onion                         -1no.
7. Tomato(Option)     -1no.
8. Lemon                        -1/2.
9. Oil                                -1no.
10. Cinamon Stick       -1no.
11. Fennel Seeds          -a few.
12. Cooked Rice            -11/2cup.

METHOD:

1. Clean and cut mint, coriander, garlic, ginger, and green chilis.
2. First add garlic, ginger, and green chili then grind it.
3. Then, add mint, coriander with a little amount of water, and grind it all together to a smooth paste. Just don't add excess water it will be great to have a paste kind of consistency.
4. Now to a wide pan, heat some oil, then add bay leaf, cinnamon stick, kalpasi, and a few fennel seeds.
5. Once it turned aromatic then add onion, cook it until turned slightly golden.
6. Now if you prefer to add tomato then add it now and cook it until it is cooked completely.
7. If you don't want tomato then add the ground mint paste along with a pinch of turmeric powder and some salt.
8. Now, mix everything well and cook it until all the water is evaporated and it forms a nice thick paste.
9. It's time to add cooked rice and mix it well just to make sure the rice and the mint paste are combined well.
10. Now squeeze half a lemon and once again mix it well.
11. That's it our tasty, healthy Mint Rice is ready. Serve it with some raita or some chips or with both😉😋.
